365 Photo Project, Day 20

This is some amaranth my wife grew last year. We had it hanging in the back yard to dry, but the weather has been sketchy for a couple weeks so we brought it inside. These are from seeds we bought to cook. We had extra so she planted some last spring. Most grew white pods but a few plants grew purple. These were sold as organic amaranth at the local Winco Foods store. You can also buy them online, but these were really cheap. Kind of surprised how well they grew. Plants were over 5 feet tall with lots of seed heads. The leaves are really tasty when the plants are young. We let a few grow to maturity for the seeds. This spring we’ll find out how well the harvested seeds do in our garden.
